Blueberry Watermenlon Granita
Ingredients
- 1 cup frozen blueberries
- 1/2 large seedless watermelon cut into chunks
- 1 teaspoon lime juice
Directions
- Blend all ingredients in a blender or food processor.
- Pour into a shallow glass container and freeze for 30 to 60 minutes, depending on how frozen you would like it to be.
- Once frozen, scrape with a fork into a bowl and serve.
Black Bean Salad with Tortilla Chips
Ingredients
- 1/2 cup black beans
- 1/2 cup diced tomatoes
- 1/4 cup fresh cilantro
- 1 1/2 tablespoons lime juice
- 1 tablespoon olive oil
- 1/4 cup corn
- 1/8 cup chopped bell pepper
- 1 1/2 teaspoons chili powder
- 1 1/2 teaspoons cumin
- 3 ounces tortilla chips
Directions
- Dice tomato and bell pepper. Chop cilantro into small fine pieces.
- Drain the black beans. In a medium-sized bowl, combine all of your ingredients and toss them together.
- Pour on top of tortilla chips or serve chips on the side.
