Cooking Demonstration

Breakfast Quesadilla
Ingredients
- Nonstick cooking spray
- 1/4 cup canned green chiles
- 4 eggs, beaten
- 1/4 teaspoon black pepper
- 2 (10-inch) whole-wheat flour tortillas
- 1½ cups reduced-fat cheddar, Mexican blend, Monterey Jack or pepper jack cheese
- 4 slices turkey bacon, cooked crisp and crumbled
Directions
- Coat a small skillet lightly with cooking spray.
- Sauté green chiles over medium-low heat for one to two minutes. Add beaten eggs and cook, stirring, until scrambled and set. Season with pepper.
- Coat a second large skillet lightly with cooking spray. Place one tortilla in the skillet over medium-high heat until air bubbles begin to form, about one minute. Flip tortilla over and cook for one minute more (do not let tortilla get crispy). Spread half the cheese evenly over the tortilla, covering to the edges.
- Reduce heat to low. Quickly arrange half the bacon and half the egg mixture over the cheese. Cook until the cheese starts to melt, about one minute.
- Fold tortilla in half to create a half-moon shape. Flip folded tortilla over and cook until it’s lightly toasted and the cheese filling is completely melted, one to two minutes.
- Transfer quesadilla to a cutting board. Recoat the skillet with cooking spray and repeat with second tortilla and remaining cheese, bacon and egg mixture.
- Cut each quesadilla into three wedges and serve immediately with fresh salsa.
Avocado Yogurt Dip
Ingredients
- 1/2 cup plain Greek yogurt
- 2 ripe avocados, peeled and pitted
- 1 clove garlic, minced
- 3 tablespoons chopped cilantro
- 2 tablespoons fresh lime juice
- 1/4 teaspoon ground cumin
- Salt and pepper to taste
- Carrot sticks, celery sticks and bell pepper strips
Directions
- Blend the yogurt, avocados, garlic, cilantro, lime juice and cumin in a blender or food processor until smooth.
- Season with salt and pepper.
- Transfer dip to a serving dish, and enjoy with sliced veggies.
