Cooking Demonstration

Roasted Salmon with Peach and Mango Salsa
Ingredients
Four salmon fillets (fresh or frozen, although wild caught is preferred over farmed)
1 tablespoon olive oil
Salt and pepper
For the salsa:
1 cup of peaches and mangoes cut into 1/4-inch cubes (or cantaloupe if preferred)
1/2 red pepper cut into 1/4-inch cubes
1 green onion, finely chopped
1 tablespoon chopped cilantro
Salt and pepper
Juice and zest of one lime (zest optional)
1 tablespoon olive oil
Directions
- Preheat the broiler to 400°F (or maximum).
- Line a cooking sheet with aluminum foil.
- Place the fillets on the cooking sheet and brush with olive oil. Sprinkle a little salt and pepper on each fillet.
- Place in the oven for 5-10 minutes, or until brown on the top and cooked throughout.
While the salmon is cooking, you can mix up the salsa:
- Gently combine the peach and mango mixture, green onion, red pepper and cilantro.
- Season with a little salt and pepper.
- In a small bowl, whisk together the olive oil, lime zest, and lime juice.
- Pour dressing over salsa and mix to combine. Spoon one-quarter of the salsa on each salmon fillet and serve.
Cheesy Chickpea and Broccoli Bake
Ingredients
1 large bunch (approximately 1 pound) fresh broccoli, rinsed and cut into medium pieces
1 15½-ounce can chickpeas, drained and rinsed
1 tablespoon olive oil
Salt and black pepper to taste
1 cup shredded Gruyere, cheddar, or vegan cheese
1/3 cup whole-wheat breadcrumbs
Directions
- Preheat oven to 400°F.
- Lightly steam broccoli on the stove: Place raw broccoli pieces in a steamer basket inside a saucepan filled with 1 inch of water. Steam on medium heat for five minutes or until broccoli is just tender and bright green. Drain water. Or steam broccoli in the microwave: Place raw broccoli pieces in a large microwave-safe dish with ½ inch of water in the bottom. Cover with a microwave-safe plate and cook on high for three minutes or until just tender and bright green. Drain water.
- Toss steamed broccoli and chickpeas with olive oil. Place in a 9”-by-9” baking pan.
- Add salt and black pepper to taste. Top evenly with grated cheese, then top evenly with breadcrumbs.
- Bake for 10 to 15 minutes, or until cheese is melted and breadcrumbs are lightly browned. Remove from oven and serve immediately.
