Chipotle-Lime Cauliflower Tacos
Ingredients
- 1/4 cup lime juice (from about 2 limes)
- 1-2 tablespoons chopped chipotles in adobo sauce
- 1 tablespoon honey
- 2 cloves garlic
- 1/2 teaspoon salt
- 1 small head cauliflower, cut into bite-size pieces
- 1 small red onion, halved and thinly slice
- 1 15-ounce can re-fried black beans, warmed
- 8 corn tortillas, warmed
- 1/2 cup crumbled queso fresco or feta cheese
- Sliced red cabbage, fresh cilantro, guacamole, jalapeno slices and/or lime wedges for serving
Directions
- Preheat oven to 450℉. Line a large-rimmed baking sheet with foil.
- Combine lime juice, chipotles to taste, honey, garlic and salt in a blender. Process until mostly smooth. Place cauliflower in a large bowl, add the sauce and stir to coat. Transfer to the prepared baking sheet. Sprinkle onion on top.
- Roast, stirring once, until the cauliflower is tender and browned in spots, 18 to 20 minutes.
- Serve the vegetables and beans in tortillas, topped with cheese and garnished with cabbage, cilantro, guacamole, jalapenos and/or lime wedges.
Beef and Broccoli Stir Fry
Ingredients
- 1 pound sirloin steak
- 2 tablespoons cornstarch
- 1/4 teaspoon salt
- 1 tablespoon sesame oil
- 2 garlic cloves, minced
- 1/2 cup water
- 4 cups broccoli florets, chopped
- 1/2 cup vegetable broth
- 1/4 cup soy sauce
Directions
- Slice sirloin steak into thin strips. Place steak into a large plastic bag and pour in salt and half of the cornstarch. Shake until well coated. Heat sesame oil in large skillet over medium-high heat.
- Sauté beef in skillet, stirring constantly, for about 4 minutes or until it is no longer pink. Place beef in bowl and set aside.
- Add garlic to skillet and cook for 1 minute. Add water and broccoli, cooking for 4 to 5 minutes. Mix remaining cornstarch, vegetable broth and soy sauce in a separate dish.
- Put soy sauce mixture and beef in skillet and cook for 1 to 2 minutes or until sauce thickens.
